                                    WATERMARK WINE

                        Mt. Veeder Cabernet Sauvignon Wildcat Vineyard Napa Valley

 

Our winemaker, Phil Steinschriber, who is also the winemaker at Diamond Creek Vineyards monitors the vineyards from which these grapes are sourced to pick at the peak of ripeness, knowing that making great wine begins in the vineyard.  The wines are cold soaked for 4 days at 55 degrees and then warmed quickly to extract the color without extracting  too much tannin.  The juice is inoculated with yeast and allowed to ferment to almost dryness.  The must is pressed sweet to avoid excessive tannin.   Aged in small French barrels for about 22 months, the wine is then bottled and warehoused for integration of its components.

High in the Mt. Veeder appellation Wildcat Vineyards meets the clouds.  At 2000 feet the air is rarified and the ultrviolet rays make the skins of the berries thick and dark.  The wines are deep and luscious with a dark ruby color and strong fruit  aromas.  The 2011 ,2012 & 2013 vintages are 100% cabernet sauvignon .

This cabernet sauvignon has massive aromas  of cherries and berries; with notes of mocha, vanilla and sweet smoke. Tobacco and cedar come through with a hints of violet and cherry.  The entry is sweet with juicy fruit flavors and black cherry smoke character.  The wine continues to please the palate as the toasty oak comes into play. A very long finish hints of ageworthiness.  This wine is great now but can be laid down for the next 10-12 years.

This cabernet sauvignon has big, bold aromas; lots of raspberry, mocha, and vanilla with notes of cedar. Tobacco and smoke come through with a hint of cassis and jam which adds complexity to this full bodied wine.  The entry is dense, with the cassis and raspberry character continuing to please the palate as the vanilla, oak and toast notes come to play.  This wine is great now but can be laid down until 2020 or beyond.

TASTING NOTES

This vintage produced a dark ruby color with rich cabernet notes of black cherries, anise and dark fruit.  Highly concentrated with addition of 100% new French oak yielding vanilla and toast notes.  The wine is thick, mouth filling and rounds out in the middle.  Notes of anise, mineral and dark cassis.  This wine can be laid down for years to come.  Best from 6 to 10 years and should hold for years to come.  This wine is a keeper.
